My Mom used to make these muffins all the time and believe me they are heavenly! The cinnamon-sugar coating creates a sticky sweet mess as you bite into the muffin and embrace the spicy-sweetness that lies inside. I made these today for my Husband and his Mom as I need to run out for a meeting and they are left on bedtime duty. These are great when you have guests or on a special occasion. I hope you enjoy!
Sugar and Spice Muffins
In a Large Bowl mix the following:
- 1 3/4 C flour
- 1 1/2 tsp baking power
- 1/2 tsp salt
- 1/2 tsp nutmeg
- 3/4 c white sugar
In a small bowl mix the following:
- 1 beaten egg
- 1/3 c oil
- 3/4 c milk
Add the wet mix to the dry bowl. Mix to combine. Bake for 20-25 minutes in an oven at 350.
While the muffins are baking combine 3/4 c white sugar with 1/2 tsp cinnamon. Have 1/2 c melted butter ready when the muffins are removed from the oven. While the muffins are still hot dip the muffins into the butter and then the sugar/cinnamon mixture.
This recipe makes 12 muffins.
Substitutions: I have added 3/4 c of cinnamon chips to the batter right before I put it in the oven and they’ve been delicious. If I add the cinnamon chips I usually beef up the cinnamon in the coating as well.
Holiday Serving: I have been thinking of serving these muffins on Christmas Morning. Usually we have grapes, cheese and pastries for Christmas Breakfast but these muffins are so delightful that I thought I would see if there was a creative way to present them along side the fruit and cheese. Pulling out my brand new Jesus is the Gift platter I arranged the muffins in a Christmas Tree (much like the way my mother used to present cinnamon rolls on Christmas Morning). I may have found my new breakfast tradition!
