Dandelions

The dandelions are in bloom and they are beautiful.

I know some of you won’t agree with me but nevertheless, they are beautiful.

A splash of color that enters our midst after a long, brown winter.  A splash of color that works it’s way throughout the land causing chaos for adults and delighting young children who long to pick flowers for their loved ones.

The dandelions are blooming and it is wonderful.  I admit this is a matter of perspective but isn’t everything?  When I look at dandelions I see them as a gift from God to remind us of the power of one.

There is power in one.  We need to remember this.
One dandelion can color a field green.
One person can share a message of love and redemption to their community.
One person can believe that anything is possible and help make it happen.

This can go the other way as well.
A pulled dandelion would remove that color.
One person can bring negativity and doubt to a community.
One person can discourage and destroy a movement.

There is power in one.
There is power in you.
How will you use your power?

13 going on 30…ish

Do you remember what it felt like to walk down the hall on your first day of Grade Nine?  How all the other kids felt bigger, knew more people and were just generally cooler than you.

Do you remember what it felt like to feel awkward and unsure, to question everything and everyone?  To wonder what your place was and where you fit in.

On days like this I feel 13 again.

I don’t like this feeling…

I {heart} Kale

I’m seriously in love with Kale right now.  We use it in everything from salads to smoothies and it brings a smooth flavor to whatever we’re cooking.  Last week we had quite a few small bunches left the night before we were headed to the farmers market and I decided to make some Kale chips to use them up.  Kale chips are delicious.

If you’re looking for a kid/adult friendly way to include more greens in your diet, Kale chips may be the answer for you.  They take an already tasty veggie and crunch it up.  You get crunch, nutrition and some fun at dinner.  It’s a win/win in my book.

My recipe is simple and somewhat vague.  I’ve included step by step pictures so that you can see it’s an inexact but ridiculously easy process and one I highly recommend attempting!

Kale Chips:

Ingredients:

  • 3-4 small bunches or 2 large ones.
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • Garlic Powder
  • Onion Powder

Instructions:

Preheat the oven to 425. 

Clean the kale very well taking care to remove the tough woody stems from the leaves.  Break the leaves down into smaller pieces and place them in a bowl.  If the leaves are too wet at this point dry them a little before placing them in the bowl.   

This is how my leaves looked at this point.  Once your leaves are prepared, mix the olive oil and soy sauce together and then drizzle over the leaves.  Lightly toss with your hands to ensure the mixture is evenly distributed.  Place the leaves on your pan.  It should look like this:

I know the pan looks too full but trust me, it’s not.  The leaves shrink and everything will be fine.   Place your pan in the oven for 12-13 minutes.  After the alloted time remove pan from the oven.

Evenly distribute the leaves on the pan and place back in the oven for an additional 12-13 minutes.  When you remove the Kale chips from the oven a second time, check to ensure that they are cooked and crunchy.  If not, cook for an additional 5 minutes.

Transfer the chips into a bowl and lightly sprinkle onion powder and garlic powder over them.  I use a very small amount of onion powder and a slightly larger amount {though still small} of garlic powder.  The important thing to remember is to start small and taste as you go.  You do not want too much of either.  Gently toss the chips and serve!

Extra Information:

I don’t oil my pan as I have an old, beat up pan that I use for things like this.  The kale really doesn’t stick and if a few pieces do I can usually scrub them off with little to no effort.  If you are using a nice pan I would lightly spray it to ensure ease of cleaning.

You may find you have too much kale depending on the size of your bunches.  If I have a bit too much for the bowl or pan I’m using, before I drizzle the oil on I rescue a couple of handfuls and refrigerate them until I need them.  They keep very well and are quite handy once cleaned and prepped.

About me:

Hi, I’m Becky, it’s nice to meet you.  Pull up a chair and stay awhile.  We’ve got lots to talk about!

I guess I should tell you a little bit about myself.  I’m a work at home mom.  I was supposed to be a stay at home mom but as a minister there are always vacancies and situations that need you so I’ve found that I am working more than I thought I would.  I love it.  Having the flexibility to be home and keep my hand in has been a real blessing to me and I am grateful for all the opportunities that have come my way.

The blog has given me a voice during a season of my life when I really felt like I had lost it.  I left congregational ministry because I needed to be with my son who was born with a Congenital Diaphragmatic Hernia.  We expected that he would need a large amount of care and that there might be complications following his surgery but he is our walking miracle and I feel so blessed that he is as healthy as he is.

Right now we are at a turning point in our family.  We face the questions of more children, work away from home and where God is calling us.  I don’t know what lies ahead but I believe that God will lead us where he wants us to go.  When I left my position I thought I was leaving ministry and in the end discovered that you cannot leave, it follows you!  This is my ministry for the moment.  A blog full of ideas and recipes.  A place where God is found in the everyday.  I hope you stay and look around.

Random Thought Thursday: April 12th Edition

  1. Does anyone know why sitcom characters don’t remove their shoes when they enter their homes?  This bothers me.
  2. My husband and I were thinking of going to Vegas in the next month or so but I’m a little nervous as we’ve never left X. before so now we’re wondering if we should stick a little closer to home.  I’m excited to have time with him but this a new experience for me.  Any advice or ideas on what we should do?
  3. X. has decided that he no longer needs naps.  Mamma still needs them though.  His nap was when I got everything done around the house.  I’ve found this to be a challenge and will definitely require a change in strategy on my part.
  4. My email box was out of control this week.  I’ve almost conquered it but have undoubtedly offended many as I was not a quick with the replies as I should have been.  Terribly sorry about that.
  5. Just copy of the Eat Clean Diet Vegetarian and am super excited!  The recipes look great and I’m going to pick out a few to try this weekend.

Let’s just end it already…

I’m tired of hearing about how the church is dying.
Let’s just kill it already and be done with it.
Seriously, I’m tired of this.

There is so much negativity floating around out there.
There is so much disbelief in the resurrection that I want to bang my head repeatedly against my desk sometimes.
When will we start believing in the resurrection?
When will we start believing that the Holy Spirit could come?

Think about it, what sane person would join an organization that believes it’s dying?  No one I know.

How are we supposed to attract people when all we do is talk about death?
We need to become a church of the resurrection.

Our focus needs to be the Gospel, not the next roast beef dinner.
We should be feeding the poor and helping our community, not worrying about cash.
We must stop dwelling on death and start embracing life.

We are a church that speaks about resurrection.
It’s time we started believing in it.

The third dream…

I had a third dream last night but after much contemplation and discussion with my husband we’ve determined it wasn’t ‘the dream’.  This is a relief!

The dream I did have involved me arriving at church at 10:27 to lead a worship service at 10:30 and finding out that the church I was leading worship at was not in the same location as the one I was used to.  Instead of the church I was used to I entered a gray room with grey folding chairs and only 3-4 people that I knew.  Then when I got up to lead worship the call to worship was incorrect and the people just ever so calmly told me to go with it.  I had a very unsettled feeling in that church and I felt weird leading things.  It did not feel like I belonged there and I was glad to wake up.

{The vivid dreams need to stop.  I have been known to have crazy dreams before but these dreams are too real.  They’re starting to freak me out.}

Jonah.

These crazy dreams have got to stop.

Last night I woke up at 4 am after having another crazy dream.  This time I was sitting at a table with quite a few people discussing Jonah.  As we were going over the text a teenager came up to me at the table and asked me why Jonah was important.  I broke away from the group and started speaking with him.  I went over all the typical things {like how Jonah didn’t want to do it, ran from God, God used him anyways etc…} and we even talked about how Jonah pouted at the end of the text so it just goes to show that even if you don’t want to do it and don’t like doing it, sometimes you wind up working for God anyways.  Then the guy turns to me and says “I don’t get it”.  So I start again…and again…and again.

Thank heavens I woke up.

The last last time I had a series of vivid spiritual dreams I wound up in seminary.  I really hope dream number three doesn’t come or I’ll have to piece together what Hello Kitty and Jonah have to do with whatever else is coming…

An Easter Reflection: They had a choice

The sun is beginning it’s stretch into the sky.  Two women gather at the door while waiting for one inside.  They are ready to go.  Eager to begin the most dreaded task.  Eager to finish so they can try to move on.  She leaves her home, gently shutting the door behind her so as not to disturb those who may still be asleep.  It’s time.  They begin their journey.

They walk arms tucked in close to their bodies.  Baskets hanging from their arms bounce against their hips as they try to stay warm, try to stay unnoticed.  They walk together towards a tomb. Stories pass among them of better days.  Laughter slips out uncomfortably and they look to each other for acceptance and peace.  Their grief echoes with each step.  This is a terrible journey.

Their conversation shifts and one woman raises the question they were all thinking.  “Who will roll the stone away?”  The stone that is far too heavy for them.  Who will move it? They keep going, determined to succeed.  Regardless of the obstacle that lies ahead they know what they have to do.  They must give their teacher a small portion of what he gave them.  They must show him love in this final task.

As they arrive at the tomb their worries shift.  The stone is no longer an issue.  They are now faced with something much worse.  Their friend’s grave has been tampered with.   The three of them look at one another.  Lines on their forehead begin to collect sweat as they panic.  What will they do?  What if the thieves are still in there?

Bravely, together they burst forth into the tomb.  Almost as if to surprise who is there.  They don’t surprise him, he surprises them.  He sits as if waiting for them.  Dressed all in white, calm and collected.  The women alarmed hold each other for support.

He is waiting for them.  They wonder why?  What’s going to happen now? Where is his body?  What has this man done?

He tells them not to worry.  He tells them of a miracle that’s happened.  That Jesus is up, he’s alive.  He tells them to go tell the others.   He expects them to do it right away.  Backing out of the tomb.  The women turn and flee.  Uncertain of what to do.  They tell no one. Their instructions were to share.  We’re told they said nothing.

They said nothing…yet.

We know the end of the story.  We know they shared with others.
We’re gathered all over the world today celebrating this moment because they told shared the message and it has now been shared with us.

They had a choice.
They could choose belief or disbelief.
They could choose to keep this good news or to share it.

Today because of their choice we gather and celebrate.
Today because of their choice we know Jesus and his love.
Today because of their choice the world is changed.  Hope is reborn.  Life is new.

He is risen.
He is risen indeed!
