Happy New Year!!!!!

This year has been an interesting year in blogging for me.  I’ve discovered new recipes, debated theology and practice in our Church and shared some random thoughts with you.   As I wrap up the year I thought I would look at what the most popular posts were to see what people are interested in.  I was rather surprised.  Here are my top 5 posts of 2011:

I don’t expect too much to change in 2012.  I will still muse about life, faith and food.  I will continue to watch my son grow and change.  I want to enjoy life as much as possible and as you know, I will blog about all of it here.  I look forward to the surprises and challenges that await!

I’d like to take this time to thank you for reading and participating in this little community.  It’s been a blessing in my life and I hope you’ve enjoyed it as well.

My hope for you this season is that you be filled with joy as you celebrate the arrival of the Christ Child.  Blessings and peace to you and yours this day, tomorrow and throughout the coming year.

A life worth living.

I find it interesting that someone found my blog yesterday by searching the term “we gather at this table to celebrate life”.   As my family gathers together to mourn the loss of my Grandfather I find that we as a family are gathering together at tables and while we grieve we celebrate.  We embrace the man that he was.  His presence was large and wonderful.  His warmth and grace was felt by everyone.  He lived a life that was enviable by most standards and no matter how much time we had together, it was never enough.  He will be missed.

As we gather together now in the holiday season, the message seems in a way more significant.  Jesus who came to save is born into this life.  A life of pain and loss, of joy and celebration.  He came to truly live and teach us how to do the same.  My Grandpa listened to that message.  He loved Jesus.  He knew how to celebrate and embrace what life offered.  He loved and was loved.  He had a life worth living.   I’ll miss him terribly but he taught me a lot and for that I will always be grateful.

Love, in it’s most vibrant and real form meets us at Christmas in the stable. It  bursts into the world.  Ripping itself from a young woman’s body, that love comes for us in the form of a baby.  He brings us love.  He brings us hope.  He teaches us how to live.

…”Love one another.  As I have loved you, so you must love one another.  By this everyone will know that you are my disciples, if you love one another.”  John 13:34-35

This week as we wait we must live in that love.  May our actions be love in motion for the world.  May the words we say speak love into the world.  May our hearts and minds be focused on what truly matters, that great gift and what he came to teach us.

Hannukah Blessings by the Barenaked Ladies

The noise around me right now is overwhelming.  Yesterday was spent at the mall where I was pushed and shoved by people who absolutely had to have whatever it  was I was in front of.  Spinach was thrown at my head in the grocery store on Thursday while I was attempting to help a woman who seemed frantic.  I’ve met people from Church who seem dragged down by the to do lists in their heads.   It doesn’t feel like Christmas is in the air.  It feels more like the end times.

I know what it’s like to worry that things won’t get done.  My shopping isn’t completed.  My Christmas Eve service is still not on paper {and I’m getting slightly panicked}.  There’s a potluck at Church tomorrow that I don’t have anything made for.  I’ve neglected writing.  I’ve neglected laundry.  It’s a very busy time of year.  It shouldn’t be this way.  We’ve forgotten what matters.  We’re pushing aside what counts.

This week while I was listening to my Christmas music, I happened upon my Barenaked Ladies for the Holidays album and was struck by the lyrics in the Hannukah Blessings song.   As they sung about how easy it is to forget Hannukah when surrounded by the busyness of Christmas, I realized how this also applies to us Christians as well.  When faced with the endless things we think must get done, activities and events we have to attend and the need to finish getting presents, we sometimes forget the baby Jesus.

The baby is coming.  In the midst of our frantic preparations, he will arrive.  Will we hear his cry?  Will we acknowledge him in the coming days?  Will we remember what Christmas is truly about?

Random Thought Thursday: December 15th Edition

  1. I am in the fantasy football playoffs!  I am very excited.  It was a stunning comeback after a terrible season.  I’m quite pleased with my players at the moment.
  2. Our little people nativity constantly looks like a hurricane went through Bethlehem.  X. plays with it all the time and enjoys himself {and that’s what it’s for} but it is quite unusual to see everything in disarray.  Definitely not your typical nativity scene, that’s for sure.
  3. Remember the accidental breakfast biscuits from last week?  I froze some to bring out later as a treat for X.  That day was Tuesday and he went crazy for them again.  If you’re looking for a biscuit over the holidays give them a try.  They are so good!
  4. At this time of year it can get easy for me to get so caught up in the details of service preparation that I miss the point of the day.  This year I am working hard to prevent that from happening.  I’m reading my Bible, taking some quiet time alone and really attempting to make room for family time.  As we head into the last weekend before Christmas I urge you to do the same.  We all need to take some time to reflect and enjoy the season.
  5. This last one isn’t technically a thought, it’s a video.  I love the Barenaked for the Holidays album and this song is one of my favorites on it.  Enjoy!    

Orchids

I’ve never had an Orchid.  I’ve always admired them from afar but was too afraid to bring one home as I thought I might kill it. Imagine my surprise yesterday when I opened the door to this, a beautiful Orchid from my wonderful Gran.  I’m so pleased she has faith in me as it is gorgeous!

As I opened the package to find out what it was, I was struck by it’s delicate flowers.  I marveled at how each petal helped to create the beautiful picture that was the whole plant.  Life is like that as well.  Each part of our life, each person in it is like a petal on an orchid.  They all leave a lasting impression and help to create the picture we remember as time moves on.

Peppermint Christmas Cups

There are many things I love about Christmas.  There’s the baby Jesus, the Christmas tree, bad Christmas movies and good Christmas movies.  All of these are wonderful and I feel that each experience is enhanced with peppermint {except maybe Jesus, I think he stands on his own}. The flavor of mint at this time of year seems to bring back all kinds of Christmas memories and really adds some festive flair.

One of those memories is a weekend long ago that I spent at my Grandma’s with my cousins.  We were busy of course and a visit to Grandma’s always involved a little bit of baking.  That weekend Grandma decided we should learn how to make Peppermint Patties and they were delicious.  Unfortunately we left with no recipe and just memories.  My grandmother is like that.  She throws things together and it works out brilliantly.   This year, I decided to recreate that experience.  One bite of these Peppermint Christmas Cups and I’m transported back to that Christmas long ago.

These cups are for all the mint lovers out there.  They are beautiful, delicious and perfect for entertaining.  Once you peel the wrapping away you see the various layers and it’s quite a lovely effect.  I would have taken another picture of them unwrapped but the cup just jumped into my mouth after I unwrapped it. You’ll have to forgive me!

Peppermint Christmas Cups

Ingredients

For the filling:

  • 4 c icing sugar
  • 3 tbsp soy milk
  • 3 tbsp vanilla
  • 2 tsp peppermint extract

For the chocolate:

  •  1 1/2 c chocolate chips
  • 1/2 c soy milk
  • 1 tbsp vanilla

Instructions:

  • Line a cookie sheet with parchment paper.
  • Mix the icing sugar, soy milk, vanilla and peppermint extract for the filling together in a medium size bowl until well combined and free of lumps.
  • Drop the filling onto the parchment lined sheet in small drops (approximately 1-2 tsp worth of filling each).
  • Place the filling in the freezer for at least an hour.
  • Once the filling is set and you’re ready to build the cups, line a mini muffin pan with appropriately sized cups and set aside.
  • In a medium size saucepan combine the chocolate chips, soy milk and vanilla.
  • Place on the stove over medium heat and stir regularly as the chocolate melts.
  • Once the chocolate mixture is smooth, remove from heat and set up your work station.  Place the mini-muffin pan in front of you.  Have the chocolate sauce off to the side.  Pull the filling out of the freezer and place on the other side of the pan.
  • Place a small amount of the chocolate sauce on the bottom of each cup.
  • Working quickly roll the filling mixture into balls and place on top of the chocolate.
  • Top the balls with the remaining chocolate mixture.
  • Once all of the layers are complete place the tray back in the freezer for at least an hour to firm up.
  • When firm, remove from freezer and transfer the Peppermint Cups to an air tight container to store in the fridge.  If you layer the cups be sure to separate each layer with parchment paper.
  • Enjoy!

Extra Information:

  • This made 36 mini Peppermint Christmas Cups.
  • These are really rich.  They would be excellent on a cookie platter or served individually {with wrapping removed to see the pretty layers}.
  • Make sure these are stored in the fridge.  You don’t want them to melt!

 

The third Sunday in Advent.

This morning I am preaching about Mary’s response to Gabriel’s visit. The Bacon Nativity

Whether you believe in Jesus or not there is one thing I’m sure we can agree on, this is nasty.

The Bacon Nativity is one of the strangest things I’ve ever seen.  If you’re going to make an edible Jesus at least make him look appetizing.   I think this needs a little color to liven things up.   I’d totally go for a gingerbread nativity.  I imagine that would be quite tasty and colorful.
